Fish Sticks with Carrot Fries

This wholesome take on fish sticks skips the fryer, keeps the crunch, and adds extra flavor with a simple pork rind crust and a quick, bold cocktail sauce. Served with roasted carrot “fries” for a naturally sweet and satisfying side.

Ingredients

Fish Sticks:
Fresh:

1 lb white fish fillets (like cod or halibut), cut into1-inch wide strips

¼ cup Primal Kitchen ranch mixed with ¼ cup water (or 2 eggs, beaten)

Juice of ½ lemon

1½ cups crushed pork rinds

Staple:

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt (to taste; using Redmond Real Salt)

1 teaspoon freshly ground black pepper

Avocado oil spray

Cocktail Sauce:
Fresh:

Juice of ½ lemon

1 tablespoon horseradish (unavailable on Amazon Fresh; Linked in items below and available in shop)

Staple:

¼ cup no-sugar-added ketchup (Primal Kitchen recommended)

Salt and black pepper, to taste

Roasted Carrot Fries:
Fresh:

4–5 large heirloom carrots, cut into matchsticks

1 tablespoon fresh dill, chopped or 1 teaspoon dried dill

Staple:

1½ tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon salt (to taste; using Redmond Real Salt)

1 teaspoon black pepper

Prep the Carrot Fries (Total: 22 minutes)

1.    Preheat oven to 425°F (220°C).

2.    Toss carrot sticks with olive oil, smoked paprika, garlic powder, dill, salt, and pepper.

3.    Spread on a baking sheet lined with unbleached parchment paper.

4.    Roast for 10 minutes at 425°F. Leave them in the oven and increase temp to 550°F (or broil) for the final 12 minutes along side the fish sticks.

Make the Fish Sticks (Bake 12 minutes or Air Fry Option)

5.    Pat the fish dry and drizzle with lemon juice.

6.    In a shallow bowl, whisk together ranch and water or beat the eggs.

7.    Add pork rinds, garlic powder, onion powder, paprika, salt, and pepper to a large zip-top bag.

8.    Dip each fish stick in the ranch or egg mixture and set aside.

9.    Using a fork, transfer each stick into the bag, seal, and shake until fully coated.

10.  Place sticks on a parchment-lined baking sheet fitted with a wire rack. Lightly spray or drizzle with avocado oil.

11.    Broil at 550°F for 12 minutes, or until golden and crispy.

      a.     Air Fry Option: Cook at 400°F for 8–10 minutes.

Make the Cocktail Sauce (2 minutes)

12.    In a small bowl, whisk together ketchup, horseradish, and lemon juice.

13.    Add salt and pepper to taste. Chill until serving.

Serve

14.    Plate the crispy fish sticks with a generous side of carrot fries and a dish of cocktail sauce for dipping.
