Print RecipePrep the Carrot Fries (Total: 22 minutes)
1. Preheat oven to 425°F (220°C).
2. Toss carrot sticks with olive oil, smoked paprika, garlic powder, dill, salt, and pepper.
3. Spread on a baking sheet lined with unbleached parchment paper.
4. Roast for 10 minutes at 425°F. Leave them in the oven and increase temp to 550°F (or broil) for the final 12 minutes along side the fish sticks.
Make the Fish Sticks (Bake 12 minutes or Air Fry Option)
5. Pat the fish dry and drizzle with lemon juice.
6. In a shallow bowl, whisk together ranch and water or beat the eggs.
7. Add pork rinds, garlic powder, onion powder, paprika, salt, and pepper to a large zip-top bag.
8. Dip each fish stick in the ranch or egg mixture and set aside.
9. Using a fork, transfer each stick into the bag, seal, and shake until fully coated.
10. Place sticks on a parchment-lined baking sheet fitted with a wire rack. Lightly spray or drizzle with avocado oil.
11. Broil at 550°F for 12 minutes, or until golden and crispy.

Make the Cocktail Sauce (2 minutes)
12. In a small bowl, whisk together ketchup, horseradish, and lemon juice.
13. Add salt and pepper to taste. Chill until serving.
