Ingredients

Fresh:

1 pound chicken tenders

6 garlic cloves, minced

8 fresh sage leaves

Zest and juice of 1 lemon

3 medium zucchinis, sliced into half-moons

2 tablespoons fresh parsley, chopped

1 cup unsweetened coconut cream (or heavy cream)

Staple:

3 tablespoons avocado oil

1 tablespoon unsalted butter

1 cinnamon stick

1 teaspoon thyme

1 teaspoon salt (to taste; using Natural Redmond Real Salt)

1 teaspoon freshly ground black pepper (to taste)

Cook Chicken and Zucchini:

1.     Season chicken tenders generously with salt and pepper.

2.     Heat avocado oil in a large skillet over medium heat. Add chicken tenders and cook for 3–4 minutes per side until golden brown.

3.     Remove the chicken from the skillet and set aside on a plate.

4.     Add avocado oil, zucchini, salt and pepper to the same skillet. Sauté for 4–5minutes, stirring occasionally, until zucchini is tender.

Add Flavor:

5.     Reduce heat to medium. Add butter to the skillet and let it melt.

6.     Add garlic, cinnamon stick, and sage leaves to the skillet. Sauté for 1–2 minutes until fragrant.

7.     Stir in lemon zest strips, lemon juice, and coconut cream. Let the sauce simmer for3–4 minutes to meld flavors. Season with salt and pepper to taste.

Serve:

8.     Remove skillet from heat. Return chicken to the skillet. Garnish with parsley and thyme. Serve chicken tenders and zucchini together, drizzled with the creamy garlic sauce.
