Ingredients
Fresh:
1 large sweet potato, diced
1 cup Brussels sprouts, halved
2 whole carrots, sliced into coins
1 small zucchini, diced
2 cups shredded red cabbage
1 red bell pepper, sliced
5 cloves garlic
1 small jalapeño or Fresno chili, sliced
1 cup fresh cilantro
1 cup fresh parsley
Juice of 1 lime
4 cups mixed greens (baby kale, arugula, or spinach)
1 avocado
2 tablespoons hemp seeds
Staple:
4 tablespoons avocado oil, divided
2 teaspoons curry powder
2 teaspoons salt (to taste; using Natural Redmond RealSalt)
2 teaspoons freshly ground black pepper (to taste)
2 teaspoons garlic powder
2 teaspoons onion powder
3 tablespoons maple syrup or raw honey
3 tablespoons water (plus more to thin sauce)

Print RecipeRoast the Root Veggies:
1. Preheat oven to 400°F (205°C) and line two baking sheets with parchment paper.
2. Toss the sweet potato, brussels, carrots, and zucchini with 2 tablespoons oil, curry powder, garlic powder, onion powder, salt and pepper.
3. Roast for 25 minutes, until golden brown and tender.
Roast the Remaining Veggies:
4. Toss the cabbage, and bell pepper with 1tablespoon oil, curry powder, garlic powder, onion powder, salt and pepper.
5. Spread onto a second baking sheet and roast for15–20 minutes, until lightly charred.
Make the Creamy Green Sauce:
6. In a food processor, blend garlic, jalapeño, cilantro, parsley, avocado, salt, lime juice, maple syrup, and water until smooth and creamy.
7. Taste and adjust: add extra lime for brightness or avocado for a silkier texture. Thin with more water if needed.
Assemble the Power Bowl:
8. In a large bowl, layer mixed greens. Top with roasted veggies.
9. Drizzle generously with the creamy green sauce and sprinkle with hemp seeds. Drizzle with oil olive.
