A nourishing and easy-to-make version of classic cabbage rolls—without the hassle of rolling! This dish is packed with lean protein, wholesome veggies, and a rich homemade tomato sauce. Using cauliflower rice keeps it light and grain-free while still delivering all the cozy flavors.

Ingredients

Fresh:

1 small head of green cabbage, core removed and chopped

1 cup carrots, grated

1 lb ground beef or pork (grass-fed preferred)

1 small onion, diced

3 cloves garlic, minced

1 (10 oz) package frozen cauliflower rice

½ cup bone broth (or water)

1 jar (24 oz) Rao’s Marinara Sauce

Chopped fresh parsley (for garnish)

Staple:

2 tablespoons olive oil

1 teaspoon salt (to taste, using Natural Redmond Real Salt)

1 teaspoon freshly ground black pepper (to taste)

1 tablespoon dried dill

1 teaspoon smoked paprika

½ teaspoon crushed red pepper flakes (optional)

1 teaspoon Worcestershire sauce

2 tablespoons maple syrup or honey

Roast the Cauliflower Rice:

1.    Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with unbleached parchment paper.

2.    Toss the cauliflower rice with olive oil, salt, and pepper. Spread into an even layer and roast for about 12 minutes, until slightly crispy on the edges. Set aside.

Sauté the Beef & Aromatics:

3.    In a large skillet, heat olive oil over medium-high heat. Add the ground beef or pork, breaking it up with a spoon, and cook for 5 minutes until browned.

4.    Season with salt, pepper, smoked paprika, dill, and red pepper flakes. Stir in the onion and garlic and sauté for 2 more minutes.

Add Cabbage & Carrots:

5.    Stir in the cabbage and carrots. Cook for 5minutes, stirring occasionally, until the cabbage softens and reduces in volume.

Build the Sauce:

6.    Pour in the Rao’s Marinara Sauce, bone broth, Worcestershire sauce, and maple syrup. Stir well to combine.

7.    Bring to a gentle simmer, then cover and cook for 10 minutes, stirring occasionally, until the cabbage is tender and the flavors meld.

Assemble & Serve:

8.    Taste and adjust seasoning if needed. Serve the mixture over the roasted cauliflower rice and garnish with fresh parsley. Enjoy your healthier, unstuffed cabbage rolls bowl!
