Ingredients
Fresh:
8 oz lump crab meat (from refrigerated jar or pouch) (unavailable on Amazon Fresh - Sub imitation crab)
8 sheets toasted nori, halved crosswise (makes 16half-sheets)
3 scallions, thinly sliced
1 large ripe avocado, sliced
3 small radishes, thinly sliced
1 small carrot, julienned
½ cucumber, julienned
Juice of 1 lime
2 tablespoons fresh basil, finely chopped
2 tablespoons fresh cilantro, finely chopped
Staple:
2 tablespoons avocado oil mayo
1 teaspoon brown mustard
1 tablespoon rice vinegar
1 teaspoon raw honey
½ teaspoon tamari
Pinch of sea salt and black pepper (to taste; using RedmondReal Salt)
½ teaspoon cayenne pepper (optional)
2 tablespoons sesame seeds

1. Use an oven, broil each nori sheet for 10 seconds on a baking sheet. Cut each sheet in half widthwise so you end up with 16 pieces total. Or run each one over a low gas flame for a few seconds until they turn bright green and smell toasty.
Quick Pickle the Veggies:
2. In a small bowl, toss 3 small thinly sliced radishes and 1 small julienned carrot with ½ teaspoon sea salt, 1 tablespoon rice vinegar, and 1 teaspoon raw honey. Let them sit and soften while you prep everything else.
Make the Basil-Lime Aioli:
3. In a bowl, whisk together 2 tablespoons avocado oil mayo, 1 teaspoon Dijon mustard, a splash of tamari, the juice of 1 lime, 2 tablespoons finely chopped fresh basil, a pinch of sea salt and freshly ground black pepper, and ½ teaspoon cayenne pepper (if you like a kick).
Mix the Crab Filling:
4. Fold in 8 ounces of refrigerated lump crab meat and 3 thinly sliced scallions into the aioli until combined. Be gentle—you want the crab to stay in nice chunks.
Assemble:
5. Lay a toasted half-sheet of nori shiny side down. Scoop about 2 tablespoons of the crab mixture diagonally across the top left corner of the sheet. Add 1–2 slices of ripe avocado, a few matchsticks of quick-pickled radish and carrot, a few sticks of julienned English cucumber, and a sprinkle of chopped fresh cilantro and sesame seeds.
Roll & Serve:
6. Fold the bottom left corner of the nori over the filling and roll into a cone shape. Press the edge to seal. Serve immediately—these are best when the nori is still crisp!
