Chicken Taquitos with Pinto Beans

Crispy, oven-baked taquitos made with clean ingredients and nourishing proteins. These are stuffed with creamy shredded chicken, refried beans, and green chiles, then finished with a bright avocado lime yogurt sauce or pico de gallo for that perfect flavor punch. Ingredients

Fresh:

1½ to 2 cups shredded cooked chicken (rotisserie or leftover works great)

2 green onions, thinly sliced

2 tablespoons cream cheese, mascarpone, or cottage cheese

1 (4 oz) can mild diced green chiles

1 (15 oz) can Siete Refried Pinto Beans; divided (1 cup for filling, 1 cup for side dish)

2 tablespoons bone broth or water

1 package Siete Almond Flour Tortillas (10–12 count)

Pico de gallo, for topping

Juice of ½ lime

¼ cup plain full-fat Greek yogurt (for dipping sauce)

1 avocado (optional, for topping or blending into sauce)

Primal Kitchen Avocado Lime Dipping Sauce (optional)

Staples:

1 teaspoon cumin

½ teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon sea salt (Redmond Real Salt preferred)

Black pepper, to taste

1–2 tablespoons olive oil (for brushing)

Print Recipe
Preheat & Prep (5 minutes)

1.    Preheat oven to 425°F.

2.    Line a large baking sheet or 9x13-inch dish with unbleached parchment paper.

3.    If tortillas are stiff, wrap in damp paper towels and microwave for 45 seconds to make them pliable.

Make the Filling (5 minutes)

4.    In a mixing bowl, stir together shredded chicken, green onions, cream cheese, green chiles, 1 cup refried beans, and seasonings: cumin, chili powder, garlic powder, salt, and pepper until evenly combined.

Roll the Taquitos (10 minutes)

5.    Spoon 2–3 tablespoons of filling down the center of each tortilla.

6.    Roll tightly and place seam-side down on the baking sheet.

7.    Lightly brush tops with olive oil for a golden finish.

Bake & Finish (20–25 minutes)

8.    Bake for 20–25 minutes, until crispy and golden.

9.    Meanwhile, gently heat the remaining refried beans in a small pot with a splash of water or broth.

10.  Make a quick yogurt lime dipping sauce by whisking together:

    ¼ cup Greek yogurt

     Juice of ½ lime

     Pinch of garlic powder, salt, and pepper

     (Optional: mash in ½ avocado for extra creaminess)

Serve & Garnish (5 minutes)

15.  Top taquitos with pico de gallo, and drizzle with the yogurt lime sauce or Primal Kitchen Avocado Lime.

16.  Serve with the warmed refried beans on the side and avocado slices if desired.
