For the Meatballs:
Fresh:
1 lb pasture-raised ground pork (or beef)
2 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 egg
2 tablespoons crushed pork rinds (or almond flour)

1 tablespoon fish sauce

¼ teaspoon black pepper
For the Coconut Broth & Bok Choy:
Fresh:
1 small carrot, thinly sliced
4 baby bok choy, halved or quartered (or sub spinach)
½ white onion, thinly sliced
1 tablespoon fresh ginger, grated
2 garlic cloves, minced
Juice of 1 lime
2 cups chicken bone broth
1 (13.5 oz) can full-fat coconut milk
Fresh cilantro (for garnish)
Sliced green onion (for garnish)

1 tablespoon olive oil or avocado oil
1 tablespoon fish sauce
1 tablespoon coconut sugar or honey
1 teaspoon ground turmeric
For the Bone Broth Rice:

1.5 cup beef or chicken bone broth
1 cup white or basmati rice

Print RecipeCook the Bone Broth Rice (20 minutes):
1. In a small pot, combine rinsed rice, bone broth, salt, and butter.
2. Bring to a boil, then reduce to low heat and cover.
3. Simmer 15 minutes, or until liquid is absorbed.
4. Remove from heat and let sit covered for 5 minutes. Fluff with a fork.
Make the Meatballs (20 minutes):
5. Preheat oven to 425°F.
6. In a bowl, combine pork, garlic, ginger, fish sauce, egg, pork rinds, salt, and pepper.
7. Roll into 1½-inch balls and place on a parchment-lined sheet pan.
8. Bake for 10–12 minutes until golden and just cooked through.
Simmer the Coconut Broth (15 minutes):
9. In a large skillet or Dutch oven, heat oil over medium heat.
10. Add onion, garlic, and ginger. Sauté 2 minutes until fragrant.
11. Add carrots and cook 3 more minutes to soften.
12. Stir in fish sauce, coconut sugar, turmeric, coconut milk, and broth. Bring to a simmer.
13. Add baked meatballs and gently simmer 8–10 minutes.
14. Nestle bok choy into the broth during the last 4–5 minutes to wilt.
15. Finish with lime juice and taste for salt.
To Serve:
16. Scoop rice into bowls.
17. Ladle over meatballs and broth with bok choy.
18. Top with chopped cilantro, green onion, and an extra squeeze of lime.
